Most people eat endive as a salad, but I find that it’s a little too bitter for my taste. By cooking it in a little of olive oil, it loses its bitterness and is a great way to eat this healthy vegetable.
4 small endives, cut in half lengthwise
Freshly grated parmesan cheese
Saute the endive halves in olive oil until they turn brown. Turn them over the brown the other side. Cover them so that they get soft.
Season with pepper. Sprinkle the parmesan cheese on top and cook them until the cheese melts.
