Cooked Endive

Most people eat endive as a salad, but I find that it’s a little too bitter for my taste. By cooking it in a little of olive oil, it loses its bitterness and is a great way to eat this healthy vegetable.

Ingredients:

4 small endives, cut in half lengthwise

Olive oil

Freshly grated parmesan cheese

Directions:

Saute the endive halves in olive oil until they turn brown. Turn them over the brown the other side. Cover them so that they get soft.

Season with pepper. Sprinkle the parmesan cheese on top and cook them until the cheese melts.

  1. That looks great! I found a similar DASH recipe for Grilled Collard Greens which I also find to be a bitter. Remove thick stems from 1# greens. Grill leaves 30 seconds on each side until they start to whither and blacken. Remove the leaves and put in a pot or bowl with a lid and let them sit and steam for 5 minutes. Then remove and cut into 2-inch wide pieces. Put them back in the pot or bowl and top with 4 T red wine vinegar, 5 T olive oil, 1/4 tsp sea salt, and 1/4 tsp black pepper. Can be served warm or chilled. Recipe says it serves 4, but it only served 2 in our house since we liked it so much!
