Chicken Cacciatore

This recipe was so easy and so delicious! This would be perfect for company!


8 pieces of chicken – I used thighs and drumsticks with the bones included and skin removed

1 minced onion

1 minced garlic clove

1 anchovy

1 c. red wine

1 c. canned chopped plum tomatoes

1 T. chopped parsley


Heal some olive oil in a frying pan. Add the chicken pieces and brown them well on both sides.

Add the onions and garlic and cook until the onions are translucent and beginning to brown.

Deglaze the pan with the wine until the wine as mostly all evaporated.

Add the tomatoes and seasonings desired. Cover and cook slowly for about one hour or until chicken meat falls easily off the bones.
