This is a fancy dish and delicious – but you need to be very careful not to overcook the chicken breasts! I ended up using an instant read thermometer and it worked out great! I believe that the thermometer is a must for this recipe!
2 large boneless chicken breasts
3 cups chopped spinach
2 cups chopped mushrooms (I used some exotic ones and they were really tasty)
3 sliced green onions
2 slices of lite Havarti
Drizzle some olive oil and Italian seasonings on both sides of the chicken breasts.
Broil them about 4 inches from the heat for about 7 minutes per side (the internal temp needs to be around 165-170).
While the chicken is broiling, sauté the onions and mushrooms until the mushrooms have browned in some olive oil. Add the spinach and continue cooking until the spinach has wilted. Set aside.
When the chicken has cooked through, turn off the broiler. Top the breasts with the cheese and return them back to the hot oven. Leave them in until the cheese melts.
Plate the chicken breasts and cover them with the spinach/mushroom mixture.
