Meatballs with Lime Sesame Dipping Sauce

If you’ve got some already made meatballs, this is a snap! A few weeks ago, I had made some smallish meatballs with beef, ground sausage, spices, breadcrumbs, and egg. I made a double dose and froze half of them. I pulled them out for this recipe.

Dipping Sauce Ingredients:

3 T. soy sauce

1 1/2 t. sesame oil

1 1/2 T. fresh lime juice

1 1/2 T. water

1 T. chopped green onions

Meatballs in Mushroom Cream Sauce

I’ve always loved this dish, only when I was a little girl, we used to use Campbell’s Cream of Mushroom Soup. This was delicious but now I like to know what’s in my food, so I try to make everything from scratch.┬áThis recipe is delicious and just as good as that other stuff!

Ingredients:

1/2 lb. ground pork (or ground Italian sausage without fennel)

1/2 lb. ground beef

1 onion (1/2 sliced and 1/2 diced)

1 clove minced garlic

1/3 c. bread crumbs (high quality)

1 egg, beaten

1 t. Italian seasonings or Herbs de Provence (your preference)

1 T. Worchestershire sauce

2 c. sliced mushrooms

2 T. flour

1 c. beef or chicken broth

1 c. fat free milk

1/4 fat free sour cream

Directions:

Saute the minced onions and garlic in some olive oil. Place into a bowl. Add the meats, bread crumbs, egg, Worchestershire, and spices. Using your hands, mix altogether until well combined. Form meatballs about the size of a ping pong ball (or slightly smaller).

In a frying pan, heat some oil and brown the meatballs well on all sides. Remove from the pan and set aside. In the same pan, add the sliced onions and the mushrooms. Cook until the mushrooms are soft and all the liquid has evaporated. Add the flour and stir. Cook for a few minutes. Add the broth. Whisk in the milk and sour cream. Bring to a boil.

Return the mushrooms to the pan and reduce the heat. Cover and cook for about 20 minutes, making sure that the liquid doesn’t dry out too much. Season to taste.

Serve over some rice or pasta or mashed potatoes.

 

Avocado Salsa for Fish

This is a delicious and fresh topping to fish. I used it on some BBQ’d salmon and it was delicious. I even ate the leftovers on some toast – does that make me a millennial with Avocado Toast? Now I know why they love it! Served with fist: 3 weight watcher poings

Ingredients:

1/2 avocado, cut into small chunks

1 tomato, cut into small chunks

1/4 red onion, minced

1 T. fresh cilantro, chopped

1 T. olive oil

1 T. lime juice

Salt and pepper

Directions:

Combine all ingredients and serve!

Cream of Mushroom Sauce

This is a wonderful sauce that can be used on chicken and pork.

Ingredients:

8 oz. sliced mushrooms

4 garlic cloves, minced

1/2 c. chicken broth

1 c. half and half

1/4 c. grated Parmesan cheese

Parsley

Directions:

Add the garlic to the pan in some olive oil and cook until soft. Add the mushrooms and continue cooking until they have released their water and softened.

Add the chicken broth and cook for a few minutes until the broth has reduced a bit. Add the half and half and cook for a few more minutes. Add the parmesan cheese and chopped parsley and stir until the cheese has melted. Taste the sauce and adjust the seasonings.

 

Chicken in Garlic Mushroom Sauce

Years ago, I used to make my mushroom sauce by opening a can of Campbell’s Cream of Mushroom soup. Even though it was always very good, I knew that it wasn’t healthy. So when I tried this mushroom sauce, I was thrilled. The taste is just as good, if not better, and it’s authentic! You can use this sauce on pork, too.

Ingredients:

4 boneless skinless chicken thighs

8 oz. sliced mushrooms

4 garlic cloves, minced

1/2 c. chicken broth

1 c. half and half

1/4 c. grated Parmesan cheese

Directions:

Season the chicken with salt and pepper on both sides. Brown the chicken thighs well in some olive oil. Remove and set aside.

Add the garlic to the pan and cook until soft. Add the mushrooms and continue cooking until they have released their water and softened.

Add the chicken broth and cook for a few minutes until the broth has reduced a bit. Add the half and half and cook for a few more minutes. Add the parmesan cheese and chopped parsley and stir until the cheese has melted. Taste the sauce and adjust the seasonings.

BBQ Sauce

This sauce is so easy to make – and so delicious! It’s much better than anything you can ever buy in the store!

Ingredients:

1 c. red wine

1 c. brown sugar

1/4 c. apple cider vinegar

1/4 t. allspice

1 c. tomato sauce

3 T. tomato paste

Directions:

Mix all the ingredients together in a sauce pan. Simmer for about 45 minutes. Season to taste with salt and pepper.

Achiote Sauce

This sauce has great flavor and can be used on lots of different types of meat. It is a marinade which takes at least a couple of hours on the meat. Try to cook the meat so that the heat touches all the aspects of the meat – like a rotisserie or standing up in a pan.

Achiote sauce ingredients:

3 T. achiote paste (I found some at Amazon)

2 T. chili powder

1 T. garlic powder

1 T cumin

1 T salt

1 T pepper

1 T oregano

3/4 cup white wine vinegar

1 cup pineapple juice

Directions:

Mix all the sauce ingredients together, making sure it is smooth. Marinate the meat in the sauce for at least 2 hours.
